Mara’s Hearty Autumn Stew ©
On a recent beautiful autumn day, I was craving a good hearty stew. A comforting stew that goes well with curling up on the couch with a blanket and a good novel. A stew that reminds me of the sunlight dancing through the trees, and the leaves as they begin to change into their hues of gold. Autumn is such a time of reflection. A time of change. The following recipe came from these remembrances. The gluten-free Cassava flour gives it a wonderful thickness with the likeness of real wheat flour. I hope you enjoy preparing and eating this meal as much as I did.
1 large sweet potato, chopped
1 large red-skinned potato, chopped
1/2 cup celery, chopped
1 cup carrots, chopped
1 cup zucchini, chopped
1/2 lb lean ground bison **For vegetarian option, you may omit**
1 tbsp Gluten-free multipurpose Cassava flour **I recommend King Lion’s brand**
2 tbsp onion soup mix (or you can use Meals in a Minutes’ Onion Green Chili Mix 1/4 packet)
5 cups water
3 cubes of vegetable bouillon
1 tbsp olive oil
Bring 4 cups of water to boil in a large pot. Place all vegetables and bouillon in boiling water. In a separate large skillet, brown bison in 1 tbsp olive oil. Transfer bison to large pot with a slotted spoon. Stir flour into the skillet drippings until well blended; stir until browned. Start to gradually add 1 cup of room temp water to the flour mixture until it comes to a boil. Be careful to add small amounts at a time; if you add too much at one time, it will clump. Cook and stir the mixture until thickened. Gradually add flour mixture and onion soup mix to pot of vegetables. Cover pot and reduce heat to medium. Simmer for 20-25 minutes, or until vegetables are tender. Serves 4 hearty helpings worth.
