Truly Free Bakery: Truly Amazing!

There I was traveling through Baton Rouge, LA minding my own business, when I SAW IT:  Truly Free Bakery & Deli.  “Oh my eyes must be deceiving me,” I thought as I blinked several times. As I pulled up closer to the bakery, I began to tear up with joy seeing that indeed this place was Mara-friendly! I never in my wildest imaginations thought that I would stumble upon a bakery & deli in the southern U.S. that is gluten-free, casein-free, egg-free, and msg-free!  No, this is not some practical joke that I’m telling you…you aren’t dreaming reading this on the screen.  You aren’t about to wake up from this loveliness only to realize that you were dreaming it.

You must understand that living in the south has presented some problems for me since I’ve been diagnosed with Celiac.  It’s been rare when I’ve found a place that has an ENTIRE kitchen that is gluten-free and casein-free.  Truly Free also has the added bonus of being egg-free and msg-free, for those of you who have those sensitivities as well.  Owners Erick & Ainsley Coughlin and General Manager Eric Nevarez are what make this place work.  From the moment that I entered, all three of these amazing people made me feel “normal” and very welcomed. By the time I left from my first meal, they made me feel as if I had known them a long time.  I could relate to Ainsley, as she has sensitivities to gluten and casein.

I thought surely that this had to be a fluke….surely these people can’t be that nice all the time.  So, in my 2.5 days in Baton Rouge, I didn’t go just once.  I went THREE times and sampled a variety of their menu.  Not only was their food superb each time….but, Erick, Ainsley and Eric were just as friendly and welcoming as they were before.  I was really glad that I had already planned to go for a long walk and trail bikeride , because I needed every healthy calorie that I consumed there!

My menu for the 2.5 days that I was camped out at Truly Free was as follows:  Erick’s Cabbage Wrap, Baked Sweet Potato Fries, Tomato Basil Soup, both Vegan and regular Red Beans & Rice, The Veggie Pizza, Hawaiian Five-O Pizza, Lasagna, Avocado Bison Burger with homemade ketchup, Tempeh Vegan Wrap with Rice Paper (MY FAVORITE!), Cucumber Salad, Chips & Salsa, GF/Sugar-free (stevia) Chocolate Muffin, GF/Sugar-free (stevia) Banana Nut Muffin….YUM!!!!  Every single thing that I had on the menu was fresh, delicious, and healthy.  It’s because they use either organic or local fruits and veggies.  They don’t fry anything.  Everything is made fresh.  So, after writing about all those things that I ate, I must say that I can’t wait to go back and try the remaining 75% of the menu!

    I have also found a totally gluten and peanut free bakery in Rhode Island. A and J Bakery in cranson, RI. They have everything from loaves of bread bakery treats and pasta….My daughter was diagnosed with celiacs disease so we go every week!
