Mara’s Sweet Tater Hashbrowns©

2 medium sweet potatoes with skins, diced

2 tbsp olive oil

1/2 cup celery, chopped

1/4 tsp dill

Salt and pepper

Heat the oil in a skillet on medium. Add celery, sweet potatoes, and dill;season to taste with salt and pepper, and cook 20 minutes, or until potatoes are cooked and crispy.  Enjoy!

Serves 2.
