Mara’s Ooh-La-La Olive Tapenade ©
My friends, be forewarned….this appetizer has a KICK to it! It is a “Mara-modified” version of the traditional Provençal and Mediterranean olive tapenades. It is a gluten-free and casein-free recipe, only to be eaten by those strong enough to brave its tartness! Be sure to check your labels to ensure you are using gluten-free versions of the below ingredients. ENJOY!
10 oz pitted and drained Kalamata olives
2 oz drained and rinsed capers
1/2 of large avocado
1 large tomato, sliced
1 clove garlic, minced
1 tsp Dijon mustard
3 tbsp chopped parsley
1/4 tsp crushed red pepper
2 oz marinated artichoke hearts
3 tbsp lemon juice
1tsp apple cider vinegar
1/2 cup olive oil
Place all ingredients, except for oil, into a food processor. Blend ingredients, then slowly add oil until mixture is smooth. Salt and pepper to taste. Use gluten-free breadsticks to dip into tapenade.
