Mara’s Delicious Strawberry “Ice Cream”—Gluten-free, Casein-free and absolutely wonderful!
I used a Cuisinart automatic ice cream maker for this because it was so easy!!
3/4 cup unsweetened almond milk
1 1/2 cups Mimicreme or other heavy cream substitute
1 1/2 cups of hulled fresh strawberries
1/4 cup of Stevia/Truvia or other natural sweetener
1 1/2 teaspoons pure gluten-free vanilla extract
Pinch of Salt
Put strawberries in a food processor; pulse until desired consistency. In another bowl, whisk the almond milk, salt, and sugar is dissolved. Stir in vanilla and creme, then stir in strawberries. Cover and put in fridge for 1-2 hours.
Turn on ice cream maker and pour mixture into freezer bowl, and let mix until thickened (about 20 minutes). If you want a firmer ice cream, place it in the freezer for an additional 2 hrs.
