This entire pan was only around 330 calories (31 grams protein!), and I ate the whole thing:) Here’s the recipe:
Preheat oven to 375. Lightly sautee 1 cup veggies of your choice. I used onions, celery, bellpepper, and carrots. In a quiche dish, combine veggies with 1 cup egg whites, 1/2 cup cheddar style soy cheese (or healthy cheese of your choice), 1/8 tbsp salt, dash of pepper, 1/8 tbsp of your favorite gluten-free spice, and top with tomato slices. Bake for 20-25 minutes or until golden around edges. This is so easy and delicious!
