Delicious Veggie Snacks

So, originally, I made this beautiful veggie snack plate for my husband Kevin. I received many inquiries about the ingredients of the dressing.  So, here’s how to make the snack plate and dressing…

1 Belgium endive

1/2 cup sliced carrots

1/2 cup chopped asparagus

1/2 cup strawberries

3 :1 ratio of apple cider vinegar to olive oil

Gluten-free spices

Peel apart Belgium endive, being careful to keep the “leaves” in tact. Place veggies inside the endive leaves and place them in a circular pattern on the plate.  Then mix the apple cider vinegar, olive oil, and your favorite gluten-free spices together.  Enjoy!!  XOXO, Mara
